Wedding cheers


This past weekend I went to my friend's daughter wedding shower. We were all really excited when her daughter finally got engaged. It was very fancy and I for one was really surprised at how the house was so lavish that I felt a bit under dressed. It was a nice time though.

They had a wedding coordinator come and decorate the tables. It all looked beautiful.



And of course the food ( I thought there was going to be big plates of all the Italian stuff but I was mistaken, still good though):

Eat your Veggies...

When you were a kid all you would hear from your mother was "EAT YOUR VEGETABLES"! And you reply would always be "Ok" but you would be thinking "this is the most gross thing in the world" and choke down every bite until it's done and it would take about 2 hours to do so (haha). So here it is 10 years later and still feel the same about vegetables but I have found a way out of this mess. The other day when I was at the gym while I was walking on the treadmill I saw the Montell Williams show. Not the usual show with the scandal but a rather a healthy one. It was showing parents and their child that was over weight and would not eat healthy veggie. Wow was that familiar. Then this lady came out with a drink that she said was filled with spinach and fruits. The kid loved it and I figured I try it and if it was gross then at least I tried. So here we go..

First you need a blender....


Some dark green lettuce or spinach (uncooked is good)

Some fruit, any kind that you like. I choose orange and strawberry. I also bought blackberries and apples to have some variety.






So peal the fruit or cut it up and don't forget to add the spinach, it's the stuff that is filled with lots of vitamins. Someone once told me that the darker the green the more rich in vitamins it is.


Blend it all together until smooth. I added a little orange juice to make it smooth.

It tasted a little too orange so I added a banana.



Just the right touch. I know I know it looks like baby food but it was really good! I was surprised at how I didn't even taste the spinach.


See I took a taste. Really good!


So i suggest when you feeling hungry and need a little something that you try this and you will definitely feel great after. I know I did.

Potatoes Au Gratin


So as usual I am trying another one of Pioneer Woman recipes and it turned out really good. Today I made potatoes Au gratin. I never really liked this stuff because it always came in a box or someone over loaded it with onions. Yuck!!! So I followed her recipe with a few tweaks of my own. I highly suggest this because it was really good. Here we go...


First get a casserole dish out or what I used was a glass dish. I lined it with butter, not very much.


Then clean the potatoes



Pioneer Woman had the skins on her potatoes but I really don't like skins so I pealed mine and cut them into cubes.


In a bowl mix 1 1/2 cup of cream

1/2 cup of milk

4 tablespoons of garlic- I always buy this jar stuff all ready to go but if you want to use fresh just cup up 4 cloves and that will do just fine.


And then salt to taste.

2 tablespoons of flour. I am pretty sure it is for a thickening agent. Stir everything up with a whisk to combine. ( I actually put some pepper and onion powder in but I wanted to make mine a little different)


Now starts the layers. First the potatoes


Then the cream mix

I threw in a little bit of cheese to make it really good.


Then the rest of the potatoes and cream mix.


Cover with foil and bake at 400 for 30 mins

After about 30 minutes you should uncover it and add some cheese to the top. Bake for 20 more minutes until nice and bubbly brown.




I actually (if you can see) paired this nice dish with some chicken that I took the skin off.


Oh wow look at that!! See i told you nice and bubbly!



Close up!!!!Cheesy goodness! I had it for lunch the next day too. That's when you know it is really good.

New Years!

New Years was quite an adventure this year. Some things happened and we won't talk about it right now but it was kind of a bad night. My boyfriend and I went to his friend's girlfriend's parents house that was out in the woods about 45 minutes away from Houston. When we got there it was freezing cold and everyone was outside. Then the ground was muddy and I got my boots covered. Luckily I brought another pair with me so I changed. Then after a little time drunk mouths were shot off and people got their feelings hurt. So it was kind of crappy night. There were some good photos taken though so I will share them with you.

This is my boyfriend's friend and his fiance. They were together a couple of months after us. Um hello where is my ring??? By the way this Sunday marks the 5 year anniversary. I am still happy, isn't that great?! You would think that we would get tired of each other. Not yet.

Christmas in Liberty

Christmas this year was really nice. It really was about spending time with the people you love. This year I spent it with my boyfriend's family. It was one of the best Christmas days I had. The night before I finished wrapping the presents and put them under the tree. My boyfriend put his under there too, that's y it looks so full haha.



And of course there was a whole bunch of Christmas movies on and cartoons...A Christmas Story, Rudolf the Red Nose Reindeer, The Santa Clause but this little guy comes from one of my favorite Christmas movies of all time....can you guess???.............Home Alone!! If you have never seen it before you should see it now. It always putts me in the mood for Christmas and it also reminds me of my brother when he was that age. Blond hair, blue eyes and bad as hell.

The next morning of course we slept in ( which was nice ). I had made cinnamon rolls the other day and I kept a batch for myself. Oh wow it was good.


Washed it down with some milk in my favorite cup. Go Saints!!


Then it was off to Liberty to my boyfriend's sister's house. I had never been there before and I thought it was really a nice place to live if you want a quiet place with lots of running room for your children. The town was very quaint and had some decorations up that really made it feel like Christmas.


Both my boyfriend and myself got presents for his family. His little nephews were so cute. Here is one of them. I just could hold this one all day.

Here is the other one. I remember when he was a baby and now he looks like a little boy. He was so cute because he absolutely loves my boyfriend. He just thinks that he is the greatest person in the world besides his daddy.

Tio (uncle ) is helping with the gifts.



So here is the little man. That is actually the present that my boyfriend gave him. His mom was telling me that he loves stuffed animals. His face lit up when they took it out of the box. It sings and says his name. It is so cute.

My boyfriend bought a leap frog learning game for the older nephew. He played that thing for hours. (That's his brother in the back.)

Every Christmas there is a sandwich that I LOVE!!! It is basically chicken, cabbage and other toppings on a crunchy yet soft bun. OH WOW WAS IT GOOD!! If it wasn't so big I would have eaten another one.


At the end of the day we decided to take pictures. I love this one.

Sorry about the women of the family. I forgot to take a picture of that. It really was a relaxing day. His sister was so nice and welcomed me in with open arms. The kids were happy and every body's bellies were full. What a great Christmas!
