Road Trip!!!!


Road Trip!!!! Have you ever see one of those movies where the valley girl screams ROAD TRIP!!! AAAHHH!!!! And Jumps up and down. Well if you can't picture it watch Legally Blond. Anyway, I decided to do a road trip my self. It was not really planned. I just told myself one day that I would go. I knew that I wanted to go to the beach after I heard how good a time my aunt and uncle had at destin, Florida. I decided that I didn't want to go to Galveston because it was just too played out and I wanted to go somewhere different. I decided to try Madagorda beach. I told a couple of people at work and they made such a big deal out of the whole thing. "Oh be careful since your going by yourself." "Why don't you go to Galveston it takes less time". I was thinking give it a rest. Jeeze people! Anyway, when my uncle found out that I was going to the beach he let me use his 4 wheel drive jeep. I was so glad that it was 4 wheel drive but I will tell you why later.

So it took me 2 and a half hours to go there. It didn't seem like a long time driving and I got to see some of the scenery.



After a while of country side I came upon a chemical plant. It was odd and just thought I share it with you.


There where also little towns that I passed that were so cool. I wanted to get out and walk around a bit but I had to focus and keep on to the beach.




Finally when I made it to the beach it was great. When I first arrived I went over the hill and paid to get in. When I went into the sand to drive down the beach......I GOT STUCK IN THE SAND!!!! I tried to spin it frontwards and backwards. Turning the wheel. NOTHING HELPED!! I sat there trying to think if I was going to get out of the jeep and get someone. And just when I was about to cry I looked down and saw 2W and 4W. Light bulb!!! Duh! So I took a chance and switched it to 4W and then the jeep popped out like it finally woke up from a sleep and I was on my way down the beach. Now one thing that everyone should know is that it is very hard to drive on the sand. So when I got to an area that was clear I set up "camp"


The beach was a little bit nicer that Galveston and the water felt really good. Not hot but not cold. The waves were a good size and I loved it. You know I thought the water was going to be a nice green but I should have know it wasn't going to be but oh well.


I also brought Rocky with me. He loved it but was scared of the waves at first. I had to put him on a leach to get him out in the water far enough.


Remember what I told you about not being crowded, well here is what I mean... lot of room!!

One thing that Rocky didn't like was the sand on his face. After all that running around he got it all over his face and body. Was very funny.


After all of the fun it was time to go home and rest for the remainder of the day. Rocky was raring to go.



Packing everything up seem to a lot quicker than setting it all up.

After getting home and getting a nice shower to get all of the itchy sand off I went into the bedroom and sat down. I called "Rocky!""RROOCKY!" "Rocky?". Then I saw a movement. I felt around....

A bump in the sheets?What the heck?! ....



Guess he was as tired as I was and just wanted to go to sleep. All in all it was a great trip.:)

I hate diets....



I hate diets. I have to say that because obviously I am on one right now. The past year and a half i have gained 20lbs and I do not like the way I look or feel right now. I used to go to the gym about 4 times a week and eat pretty good. My rule was during the week I would eat fairly healthy. Not too much sweets or fatty stuff and during the weekend if I went out to eat I could get whatever I wanted. It worked pretty good and I ended up a size 4. I was finally promoted at my job from doing account stuff to project management. The plan was that I was going to take the place of another girl that was going on maternity leave and learn the ropes and when she gets back we will continue with how everything was and I will continue to do my assistant job. I loved every minute of it and I even figured that I wouldn't mind being this for the rest of my career. ( Keep in mind I wanted to finish school too) It was great at that time. I was so busy but I didn't mind because I love it. Then about 2 weeks before the girl was going to come back from maternity leave I had gotten a phone call from West Jefferson Hospital. A doctor told me that my mom was in the hospital and that he needed to speak to me right away in person. He told me that he thinks she has colon cancer. It was a whirl win from there for two weeks. I was in and out of work ( mostly out) and I stayed with my mom and my aunt for 3 weeks until finally in hospice care she passed away. It was the most awful thing that has ever happened to me. I can still remember her face and what she looked like before she died. It haunts me every night. I can't seem to get over it. I was severely depressed. I saw a councilor at school and when to church for counseling and nothing seemed to make it better. When people tell you that time heals all...it is not true. There is still a big hole in my heart and if you talked to anyone that has lost someone very deer to them then they will tell you. Maybe the pain won't be as much or fresh but it is still there. So back to my story. I had gotten depressed and quit working out for about a year and a half. Gained 20 pounds and now my cloths hardly fit and I am sick of it. I tried going to the gym and eating like I regularly do but that didn't help so this is the second week that I am "dieting". I have no mayo ( I have slipped once, but you try eating a sandwich dry, it gross) excessive sugar, soda, anything really high in calories. As you can see I went to HEB and got a bag of tilapia frozen. I took some out to thaw and stick it in some foil along with some frozen veggies and it tasted pretty good!!!



I don't know if you can see but it was super juicy and came out very good. I just seared both sides with some olive oil and Cajun seasoning and put it in a pouch at 350 for 30 minutes. I ate it so quickly. I wouldn't mind having it again after I get back from the gym tonight but I have to restrain myself. I also made another note to myself. If I get down 10 lbs I will be happy as a clam. I realize that I am not a little girl anymore and that my body is changing but I could still loose a little weight and its all about being healthy. So go out there and grab an apple instead of a big juicy burger with lots of cheese and a Dr pepper and curly fries. OK STOP!!! I have to go before I make another cheat. Go healthy!!

Sunday Dinner..Yummy goodness!!


Well the weekend has come to a close and I decided that I would cook myself something good to eat. I had a craving for pulled BBQ pork. One secret that I want to tell y'all is that I had never made it before. I kept thinking what spice do I put with it and how much water should I cook it with. So for those of you that panic there is always some rules that you should follow... Onions are good with 99% of meat, just cut the onion into big pieces. Second pepper and salt are the number one spice that will always be good. If you have any questions as to what to use, keep it simple and just use s&p ( salt and pepper). So I started off with a big piece of pork shoulder, started the big pot with putting some olive oil ( because it is better for you than veggie oil) in the bottom, put down some garlic in the pan and put some pepper and salt on either side of the pork. Seared both sides to conceal the flavor and moisture. I put it in the oven at 300 degrees for 7 (yes you read correctly) hours. It turned out like the picture below... isn't it beautiful!!!!



I had to stick my fork and taste it..






I tried to get all of the pork out in one piece but it just fell apart as you can see.



After I finished scrapping the rest of the pork from the pot I took the fork and just stared to pull at it. It came apart so easily.



I know. I know. I cheated and used the BBQ sauce from the store. I stood in HEB for 20 minutes trying to decide if I would make it or not or should I buy the sauce. Then I tried to decide which sauce to use. I wish that they had consultants at the store to tell you which to use and how it tastes so you don't get home and go.. Oh crap this taste horrible... But it worked really good.




After you open the bottle you poor it all over the pork. You pour a little at a time and stir so that you don't drown it in BBQ sauce because you still want to taste the pork.



Add a little of the broth from the pot and it is a great combo.



I put a bun with some butter and placed it in the oven for 15 minutes along with the mixed pork and BBQ. This it what the result was... Looks great doesn't it??


Nice dinner to end the weekend!!


I ate so much that I couldn't finish it all. After about 15 minutes I devoured the rest of it.
