Cheesecake notes

Ok fokes I'm back with an update about the cheesecake and why it looked like crap. (Can I say crap?...Oh well I just said it again) So I found out a few things about the fall of the cheesecake and some helpful tips to help anyone that was thinking about making one.

1. Put a water bath in the oven with the cheesecake- if the cheesecake looses too much moisture too quickly it will swell up and then fall flat on it's face.

2. If you are working in a cold room and open the door (ME) then it is no use to cool slowly, it is the same thing as just putting it in the fridge and cooling it that way.

3. When you beat the ingredients together, beat until combined so that there are not a lot of bubbles. Run a butter knife through the batter before placing it in the oven. It will remove the bubbles.

Hopefully next time I will do these and it will turn out the way I like it.

I'll be home for Christmas...I mean March!

My sister is finally coming home from being at sea for 6-8 months or something like that. I have missed her since she decided to join the US Navy and change her life completely. I think it was a great idea and I was so proud of her for first completing boot camp ( I can't imagine having someone yell in your face and tell you when to get up, how to dress and all of the other stuff that comes with devoting your life to your country). I decided to make a blog about her and let the world see how much of a fun and beautiful person she is.

This is her currently today, all dressed up in her best. Actually this was at Christmas a year ago and she was in boot camp. My aunt and I went to see her and she was a completely different person. So grow up. I can't imagine her now after 6-8 months, or something like that. I hope she still has her goofiness somewhere in that brain of hers.
This photo was taken wwwaaayy long ago. We both were at a crawfish boil at my Grandpa's cousins vacation house. That was before hurricane Katrina, now nothing is left in that place.

AAWWW! Here she is as a kid. What a cutie!


This was at my 18th or 19th birthday. She is the one with the chop sticks in her mouth. Walrus face! My cousins think she is so funny. I secretly think they like her more than me. haha!


This picture is when our aunt took us to California and we had the best time ever at Universal Studios. This was the Jaws ride. He came right up against the boat!

Christmas. We were only suppose to get one of those burt bees boxes but instead each of us got a box of it. My cousin was like but it was so cheap. SO hilarious.

Cheesecake love

This Valentine's was very nice. Actually now that I think about it my boyfriend is very good about valentine's day. He always gets me flowers (which I know is a cliche but I love it) and takes me to dinner. i always try and think of something to get him. This year I decided to make a cheesecake. Not just any ordinary cheesecake but an OREO CHEESECAKE!! Holy Jeez um!!!


Ingredients:
Spring pan
5 eggs
sugar
flour
vanilla
sour cream
oreos
butter
cream cheese


First thing you need to do is get your spring pan and line it with parchment paper.

Then as the cream cheese is getting to room temperature you can make the crust. Put about 25-30 of the oreo's in a blender or bad or any other way you want to crush them to a pulp and add 2 tablespoons of melted butter. Should look like this.


Press into the pan


After that we can get to mixing the cream cheese. Don't get frustrated like I did, the cream cheese will stick and you are going to have to scrape down the sides at least 5 times. (By the time I was done with the first step I was talking to the mixer like I was Tony Soprano and he was the snitch..."You're going to work the way I want you to work or you see that window right there, you're going through it, YOU GOT ME MIXER??!!"



Then when the cream cheese get a little bit more softer you put in the cup of sugar.


After that is combined you can put in the 5 eggs, but make sure each one is combined before you put in the next one.


Then add some vanilla


Mix it some more

Then some flour. (don't really know what this is for but it was in the recipe)


Then some sour cream.

Mix it until creamy and it should be really creamy. Make sure you mix the sides and bottom to get all of the unmixed cream cheese into the rest of the mixture. I tasted it and wow was it good. I think it was the sour cream that made it good.


Just for some zing I added some oreo's in the batter.


Pour the mixture into the pan and bake

After about an hour and 15 mins it should look like this. Then turn the oven off and open the door for an hour.


Wow what happened? That thing is ugly!!! I don't know why but it sank so I decided to put some whip cream on it to make it pretty again.

The finished product. My boyfriend liked it, I kinda wish I had a bite before I gave it to him. Oh Well HAPPY EATING!!

Shrimp A La Nancy

One of the best ways to cook a meal is when you have been dying to have something you haven't had in quite a while. On this say I was dying to have shrimp but was trying to make a dish that was good, hearty, and to use as little fat as possible (You do need a little butter just so you don't spit it out for not having any flavor at all. That's why I'm not to fond of salads, it's all crunch and no taste haha) So I made a dish called Shrimp A La Nancy. It was just some stuff I threw together.

Lets start with the ingredients shall we?!:

Of course shrimp


Italian seasoning

My fave garlic

Tomatoes ( just read the can)



A mini can of tomato sauce. Remember to get the no salt added that way you can keep count of all the salt you add.


And pasta
Now I would get the pasta started because you can do the other stuff while it boils and it doesn't really take long to make.


Next peel the shrimp




Place it in a strainer and rinse





Get a skillet and add a touch of butter for some flavor.


Add the can of tomato sauce and tomatoes diced.


Next add the shrimp and toss it around a bit.

Cover it with a lid and cook for 10 mins or until the shrimp are pink


All done. It looked and tasted so good.

The Perfect Place

In your 20s one of the major things that you do is live in an apartment. The first one is usually the one where you liked it when you saw it, or someone picks it out for you and says "This is the best place ever and you absolutely need to live here". Then you live there about 6 months and go wait a minute I am not loving this place as much as I saw it that first day. So here I am about to make a great step in my life and pick out a place that I love all around. There are of course good and bad things but I am sure that the good absolutely out weighs the bad. I wanted to share with you a sneak peak into my next apartment. I will be officially out of the new place in 2 months. I know it is a long way but I am stoked. At the end I will give you a little insight as why I wanted to move and later on I will do a comparison of the two place.




This place was perfect for me. It was nice and clean, lots of room for rocky to run, pet stations, and trails. These are pictures from their website and I know what you are thinking but these pictures are exactly like what i saw so don't be fulled.

This is the nice office, the only thing different were the cars parked out front.


This is the club house. It is free during the day if you wanted to have a get together or BBQ and at night you can rent it. I might do that for my birthday.


In the club house there is a pool table that is free.



A gym and also a Pilate's (or however you spell it) and yoga instructor. They just put in plat screens and after 10 you need a key to get in. They are also installing camera's in the next month, which makes me feel very safe.


This is like the study area. wi fi with printer and computer stuff. It would be a nice place to come and do some studying.


This is the pool. There are actually two pools.

This is my floor plan. Last year when I was searching I had looked at this apartment before and I fell in love with it then and when I walked in I was still in love. I remembered it immediately.
This place has so much storage. It has a coat closet when you walk in, a storage until outside and also a linen closet.


This is the living room. It was really funny when I saw this picture because the furniture was exactly the same. The woman said instead of the place to put the TV there will be a fire place.

Closer to walmart and cheaper grocery stores

Negatives:
Quite a drive for work and school
Won't be able to go home at lunch
Electric stove instead of gas
live on the 3rd floor (won't really be nice when I have the case of water bottles to bring up)
The other thing that made me think I was doing the right thing is that last night my neighbor had his car broken into and I know it can happen anywhere but I feel like living where I live there is more of a chance that that will happen again. So if you want a visual tour click the link below.
