Game wings...

This weekend had it exciting parts too. I am a student and my college football team the university of Houston cougars had a big game this weekend so what else should I make was WINGS!! Homemade of course.

I started with the ingredients: Franks Red Hots

2 Sticks of butter ( You know it will be good if that much butter is in it.)

Some Tabasco

Wing drummettes

Veggie oil

First thing that I did was rinse off the chicken.

Heated the oil in a pan.



While the oil was heating I drained the chicken and went over it with a paper towel so when I put it in the oil it won't splatter.

I fired them babies up until they were nice and brown. It takes about 20 minutes with the occasional turn of the wings.

While the wings are cooking away we can make the sauce. Melt 2 sticks of butter and after that is done put in the Frank's red hot sauce.

Mix it up until it is nice and combined.



Now to KICK IT UP A NOTCH... Add a few dashes of Tabasco. See the red in the pot?... Oh yea baby! Stir it some more and the sauce is done.


You need the chicken it be nice and golden like this...

Put the wings in the sauce and give it a nice toss.

Should be nice and coated with that yummy goodness.

Sit back relax and watch the cougars kick butt!! (They won by the way and now are ranked 12 in the nation, which is a big thing because they are not known for their football.) GO COOGS!!

Surprisingly Good...

This weekend was good but bad too. I did a lot of cooking and it was a surprisingly good. The bad part was my sinus was acting up and I had to drug myself. But on Friday before things got worse I went to the park to walk the track and when I got home I didn't feel like cooking so I wanted to make something super easy and quick to put together. I had boneless chicken out so I remembered when I was in 7th grade in my ever so fun home economics class that we made chicken casserole. It was good and one of the dishes I wanted to say was a good comfort food. I decided to make it but put a little twist and it was as I said earlier surprisingly good (Especially for making it out of my head). I started with boneless chicken, grated cheddar cheese, a can of mushroom soup and rice with of course water.

In a casserole dish I put the rice (1 cup and 2 cups of water), cream of mushroom soup together.

Stirred it up. It looks gross but in the end turns out good. When I saw this I had second thoughts but as the pictures go on it get even grosser haha!

Add the cut of chicken pieces (see what I mean?!)

Grate some cheese. I did a whole cup and it was great but you can put as much or as little as you want.

Stir it up again. Let the cheese get mixed up in the murky water. Put it in the oven @400 for 30 minutes and it comes out looking like this... I took a bite first to see if I was going to post this or not. It was FREAKING AWESOME!!!!

Paper plates are the bomb! Since I am a lady without a dishwasher this saves me lots of dishwasher liquid:)

Doesn't it look nice and cheesy and good?! It was a good comfort food and was good even warmed up the next day. I am officially on my 3rd day of eating it and still taste good. I highly recommend trying it.

Fred

Have you ever been to Petsmart and your dog is telling you that he wants a new toy? Well after a year of having this precious dog he has never asked me for a single thing until now... boy was it a bad mistake.

Meet Fred. He is a vampire doll (Halloween stuff is already coming out) that loves to fight with Rocky. One night while they were wrestling something bad happened.....

Fred drawled his fangs and said "I want to suck your blood"!!


Rocky said "No wayy Jose"!! They were wrestling and fighting and I wanted to run for the door but every time I went for it Fred would come after me with his dive bombing technique. I managed to get away. Suddenly I realized why he was going after me now...


Rocky had been bitten!!!!!!!!!!!

What the matter boy?? You ok? Are you still a human dog?

"Nooo" "I want to suck your blood"! He lunged and.....

Green Chile Stew



During this time of year one of my favorite restaurants has a "chile festival". Everything on the menu is changed and has some sort of chilies in it, the place is decorated with cut out chiles and you can also buy already made chilies by the pound. Very fun and very HOT! When I went over there with my boyfriend to eat one night I had gotten Blancas enchiladas. It was sssoo good but the bad part was that it was addicting. And it was a bad addiction. Let me explain a little further by describing the plate. It is chicken and pepper jack cheese filled with a creamy sauce and little bits of jalapenos in it. I took a bite and I wanted to rip my tongue out and dance on it to put the flames out. As soon as the burn subsided I took another bite and the flames rolled on. It tasted so good (after the burn went away) that I ate the whole thing. It took me an hour but I ate it all. So after all of the mess and we were getting ready to leave the waitress asked if I wanted to buy some chilies that were roasted and cut already. I said yes but my butt was saying no. HA! ( My stomach was fine just to let you guys know) My boyfriend decided to have their chile stew the next day and loved it. He asked me if I could try and make it so I went and found their recipe from a reliable source;) So here we go...



First you need to cook some boneless skinless chicken so add some olive oil and heat it up.


Brown the chicken on each side. While that is cooking you need to start cutting up some veggies.

Cilantro, carrots, green onions, regular onions, potatoes and a can of peeled diced tomatoes.
You also need to buy some chilies or jalapenos and roast or boil them and then I put them in a blender to make it smooth. I don't like chunky onions or jalapenos so this made it way better to just blend it until smooth.

Take a closer look.

It should look a little like guacamole....

Put all of the chopped veggies, chilies, and some chicken stock into the pot with the chicken and let boil.


Cover for about 15-20 minutes until the potatoes are cooked through.


I decided to be fancy this time and get out my bowl and large plate to make it look like I have fancy kitchen plates. I love black and white, it goes with any food.

Pour you some of that good stuff.

Doesn't it look good...?! And if you wanted to add a dollop of sour cream. It really was good.

Roemlein night!

So here we are again, another cooking session. I know that there has been a lot lately but I have been couped up in the house because of the money shortage. Everyone has it in there life so I just accept it. The other night I cooked for the Lucas family and the next night I decided to cook for the Roemlein family. My aunt has a really rough week so in her honor I decided to make a dessert to take over there. I didn't want to make it there because it would have taken too much time and energy from me. I saw on one of my favorite cooking shows that they were making a tart. I decided to make a chocolate tart. It really sounded good.


Start with a pie crust. I cheated and just bought it at the store.

I wanted the crust to be a little thinner so I used a roller...I mean a can to roll it out to make it thinner. Like I said I am short on money now a days or I would go to my list on amazon and buy all of the cooking supplies I added.

Put the pie dough over the pan.

Press down on the sides so it takes the shape of the pan.

Poke holes in it so it doesn't rise. And put it in the oven to get a little golden brown. Just use the baking instructions on the box it came in.

While the crust is baking you need to melt the chocolate. Double broiler style. Hot water and since I don't have any bowls to put the chocolate in I used a huge measuring cup. HAHA Well I though it was funny!






Melt until smooth.

While the chips are melting you need to scald some milk

cream

and 2 eggs and 1 egg yoke.

Now that the chocolate is smooth you can combine the chocolate and the milk mixture.

Stir until smooth.

Pour into the cooked crust. Doesn't it look good. I did all of this in way to little time and I didn't get to snap a picture of the finished product so I will leave it up to the imagination again. So as I grabbed my dog and rushed out the door I nearly fell down the stairs. Lesson for the day: Who cares if your late, no sense in loosing a tooth over it. Especially your front tooth. So I decided to make my famous fried chicken. Here is how I made it. I have to apologize for the wacky pictures because my cousin was taking it and she is a teenager. You know how those little devils can be. "Oh whatever" "Don't bother me, I'm doing nothing right now and I like it" "I didn't do it and don't ask me who did because I'll just act annoyed". Wow flash back!!!!!! Moving on.
First take some eggs and milk and mix it together.



While you are mixing everything have some oil heating on the stove.

Take some flour and mix it with the all powerful emeril's original seasoning.



Take the chicken and dump it in the egg mix and then in the flour

Oh wait here is when I changed my mind and used a zip lock bag to shake the chicken up in. I realized that for the size of the plate and size of the chicken it would be a messy disaster.

Now fry that chicken baby!!!!! Look at em goooooo!

You should cook them for about 15 on each side or until it is nice and brown.
