This weekend was good but bad too. I did a lot of cooking and it was a surprisingly good. The bad part was my sinus was acting up and I had to drug myself. But on Friday before things got worse I went to the park to walk the track and when I got home I didn't feel like cooking so I wanted to make something super easy and quick to put together. I had boneless chicken out so I remembered when I was in 7th grade in my ever so fun home economics class that we made chicken casserole. It was good and one of the dishes I wanted to say was a good comfort food. I decided to make it but put a little twist and it was as I said earlier surprisingly good (Especially for making it out of my head). I started with boneless chicken, grated cheddar cheese, a can of mushroom soup and rice with of course water.

In a casserole dish I put the rice (1 cup and 2 cups of water), cream of mushroom soup together.

Stirred it up. It looks gross but in the end turns out good. When I saw this I had second thoughts but as the pictures go on it get even grosser haha!

Add the cut of chicken pieces (see what I mean?!)

Grate some cheese. I did a whole cup and it was great but you can put as much or as little as you want.

Stir it up again. Let the cheese get mixed up in the murky water. Put it in the oven @400 for 30 minutes and it comes out looking like this... I took a bite first to see if I was going to post this or not. It was FREAKING AWESOME!!!!

Paper plates are the bomb! Since I am a lady without a dishwasher this saves me lots of dishwasher liquid:)

Doesn't it look nice and cheesy and good?! It was a good comfort food and was good even warmed up the next day. I am officially on my 3rd day of eating it and still taste good. I highly recommend trying it.
